Oriental Noodle Salad 

INGREDIENTS (serves 6 people) 
1 pack cooked fine Rice Noodles 
3 Spring Onions (finely chopped) 
1 large Grated Carrot 
1 small pack mangetout (finely chopped) 
Half Cucumber (peeled, de-seeded and Chopped) 
1inch Fresh Ginger (grated_ 
Small Bunch Coriander (chopped) 
1 Green Chilli 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Preparation 
Prepare all the above ingredients as shown and toss together in a deep salad bowl. 
 
Dressing: 1 tablespoon Extra Virgin Olive Oil 
Juice and Zest 1 Lime 
2 tablespoons Sweet Chilli Sauce 
1 tablespoon Soy Sauce 
1 tablespoon Sherry Vinegar 
Black Pepper 
 
Combine all the ingredients for the dressing together, pour over the Salad and toss together well. 
 
This keeps well in the Fridge and can be made earlier in the day as it benefits from all the flavours having time to develop!
