Chocolate Fudge Brownies 

175g Butter 
300g Dark Chocolate (chips or squares) 
350g Caster Sugar 
1 ½ Teaspoon Vanilla Extract 
4 Large Eggs 
100g Plain Flour 
Preheat oven to 180c or gas mark 5 and line (12”x 8”) baking tin with baking paper. 
Place the butter, chocolate and sugar in a glass or plastic bowl and place in the microwave on full power for 3 minutes to melt. Stir until the mixture is smooth. 
(This can be done over a pan of hot water if preferred, but be careful not to let the bowl touch the water, or it will get too hot and the chocolate will crystallise.) 
Whisk in the vanilla extract followed by the eggs one at a time then fold in the flour. 
Pour the mixture into the baking tin and bake for 25 minutes. Check to see if the brownie is cooked by inserting a skewer into the centre and you are looking for crispy top and moist sticky middle. If the skewer has wet runny mixture on it, return to the oven for 5 more minutes. 
Cool in the tin. 
We top this with Ganache. Melt equal quantities of cream and chocolate together gently and beat together until glossy and smooth.  
Then sprinkle with decorations of your choice.
