Basic hygiene 

It's easy to lapse when it comes to hygiene in the kitchen but this is a critical area when it comes to preparing food. 
Simple things like how long should food be kept in the fridge, which part of the fridge is coldest, on what shelf should raw meat be stored and so much more. 
Hand washing and cross contamination needs to be understood if you are to avoid a nasty bug. You should also be aware of any allergies that you or your guests may have along with special dietary requirements such as gluten free, dairy free, Vegetarian or Vegan. 
It's all about healthy eating, not just in the produce that you use but also in the way you store, prepare and cook food.
